Lemongrass has a lemony aroma and a citrus flavour, with a slight hint of ginger. It works wonderfully with coconut based curries.
The lemongrass plant is native to India, although it is now grown in various parts of Southeast Asia and West Indies. The plant is a tall tropical grass and looks very similar to spring onions. Lemongrass is a key ingredient in Thai and Far Eastern Cuisines; it is a popular ingredient in curries which gives Malay and Thai dishes a totally different flavour than Indian curries.
