Madras is one of Patak's most popular curries - hot, spicy and usually a lovely vibrant reddish colour, it originates from the South of India - in the region formally known as Madras - now called Channai. Their version blends authentic spices like cumin, coriander, turmeric and tamarind with garlic and chilli for a wonderfully rounded and flavoursome curry - with a nice spicy kick to it.
